Other strict selection before the delicate de-stemming process; the first fermentation has taken place in small stainless steel vats at a controlled temperature lasting 15 days. Analytical Data: 12.8% alc/vol Ageing: rested in small Allier French barrels of second and third use during 4-5 months. Minimum bottle resting of three months prior to release date.
